I have the most fun in drainage ponds, golf course water hazards, larger creeks, etc. with ultra light tackle or fly gear. Small baits too - 1/32oz jigs, etc. If you were coming further up North into the Gainesville area I could give you a few good spots to go it.

Aside from the beach, see if there are any good springs locally. If not, see if you can get grandma to drive you up to Homasassa, Silver Spings, the Rainbow River, or Poe/Blue/Ginnie. Worth the drive...

no peacock bass on the Naples side, you must go to the east coast of Florida, lots of mayan cichlids around Naples
 
I dare you to bring back a bowfin or alligator gar!!!!! Personally I would aim for a Clown Knife, redfin pickerel, peacock bass, oscar, mayan cichlid, walking catfish, sailfin pleco, armor-plated catfish, swam eel, or american eel. If you go out on a boat, watch out for glass carp. Boats scare them and the whole school in the river will start jumping out of the water, and they're heavy.
