He's looking awesome Hipporhyn, you're doing a great job with him! Imho it also shows the positive effects of putting him in a larger tank and not some cramped 40g: a 90 gallon like you have is going to bring out the best, significantly increasing the chances for a happier and healthier fish, smart move that.

So here is Hector (sorry about poor picture quality, took quick shots with phone). It has been about 16 months since I got him. He is approximately 10” long, 6” high and 2” thick. He is robust and healthy, possibly a little bit too fat. I have been feeding him 2 large feedings of high quality pellets twice daily to grow him. I know that adult SA or CA cichlids only need to be fed about twice a week. I’m wondering if anyone can tell me; at what point should I reduce Hectors food intake. He is still growing.

At this size he is an adult, reducing the total quantity for sure and you can feed once a day.
