I always read zero nitrate, even after a week or more. Your best bet is bacteria... but it's your setup, you need to work it out.
Without a special denitrate filter or heavy planting it's very unlikely have zero nitrate. Your standard biological filter does not home the correct bacteria. Nitrate break down is anaerobic vs ammonia and nitrite break down are aerobic

my tap water also has nitrates in it, but it seems to drop after a bit in my tank,....I have no idea why, I always assumed it's just because I have a ridiculous amount of natural bacteria. I still do regular WCs and everything has been great as long as I kept fish, so maybe you're ok with the species you have?

All my fish are pretty hardy, some maybe bullet-proof lololol i'm not sure what you keep though......nitrate sensitivity varies from species to species im sure

Yes it does. The "wet" part of my sump holds 30 liters of Pond Matrix, which develops anaerobic bacteria. I've let it go 10 days, zero nitrate. I don't want to let it go longer, I prefer to keep the water fresh, so I do 70% a week with my python, but it always reads 0/0/0.
