F1 has one of them, kinda mickey mouse serra, it will be ideal for your 56g
You may want to research piranhas a bit more!
-Genus Pristobrycon (NOT SERRASALMUS) contains 2 types of piranhas, Denticulatus and Maculipinnis both of which are very hard to obtain. A Denticulata can max out at 8" but usually 6" in aquariums which is all dependent on diet, water quality and space! They can also be kept in schools of 3 or more but in at least a 4'x18" tank that has cover and plants! Denticulata Piranhas are known for their teeth

Most species of "Serra" don't grow much over 6-8" in captivity and if they do its takes years and years, hence the fact that wild caught serras over 8"+ like Rhoms are expensive!
Aside from Pristobrycon and some Serrasalmus there is one last type of piranha that maxes out small, at 3"! -Genus Catoprion mento, aka "Whimple Piranha," are a schooling piranha that are also rare, they obviously are the smallest of the Piranha family but IMO equally as cool!
You could also get some exodons, very active schooling fish that are aggressive and will suit that tank nicely.
All in all if you purchase a baby/young "Serra" such as a Rhom or Sanchezi it will likely take 4 years or more to exceed 6"! Maculipinnis, Denticulata or Whimple Piranhas are also all great choices for your new tank!
As for a "Mickey mouse" piranha I'm not sure one exists..... even small species of piranha do not have attributes of a fictional cartoon mouse! But this is also coming from the same member who said keeping a Rhom is cruel! Hmmmm...
