these are professional chefs, and any raw meat sold for the purpose of "raw eating" is more heavily inspected than those that are intended to be cooked.
all these dishes are healthy and natural. is there any wonder Americans eat preserved food with tons of "I don't know what" and gets all sorts of health problems??
to clear the record, most Asians don't traditionally eat raw food. so the "flues and diseases" come from "that part of the world", doesn't really make much sense when you're trying to connect it to eating "half dead animals". it's more to do with prevention, immunization, and the general health care of impoverished regions. but the irony is, all these videos are of Japanese dishes and Japan is probably one of the most advanced and healthiest country in the world.
