No such thing as 100% freshwater goliath grouper. Adult Goliath Groupers lay their eggs in estuaries and freshwater mangroves. Their babies can tolerate 100% freshwater but as they go into juveniles, they are brackish and eventually saltwater fish. If you keep them in 100% freshwater they will stress out and get all sorts of disease and can die.

It's going to have put back in salt over time as it grows. A lot of fish will travel into rivers off the ocean were the water is less salty to lay eggs so the eggs and they young will have a better chance of surviving and then as they get bigger and arnt as much if a target, they will return out to sea. Even bull sharks and saw fish will do this. I'll just die and won't be as healthy if you keep it it FW for too long.
I buy many small grouper few years ago the seller say is 100% convert to freshwater but end up not after 3 days all die . So I just want to know can TS confirm his grouper is it really 100% convert into freshwater ? if yes I will buy .
