If you plan to put some lights on there then easy plants like java ferns or anuba would do but if you are not, then as others said pothos with roots immersed only is the easiest way to reduce nitrate.

There will be a 60w 6500k spot lamp over it. So should I just get a piece of wood and attach java fern and anubias to it?

water sprite...it grow crazy fast and does not need to be rooted or it can be rooted..will grow right up and out of the water!..crazy fast growing plant under almost any light.
