I'm not 100% sure to be honest, which is why I'm not sure on what I want to ask for them yet.

A Lates calcarifer is commonly known as a barramudi, correct? Any distinguishing features on youths I could look at to see whether they're Lates calcarifer or Lates niloticus?

They originate from Africa, I know that much. So my wholesaler told me anyway.

if infact they're from Africa, then it makes them more likely L.niloticus. Of course you can't always trust what the wholesalers tell you, more often then not, they don't know and just googled up giant perch, which is on the list from hong Kong imports, which is calcarifer.
the body shape and pattern looks more like calcarifer, the price which you've not listed is a big difference as well.

I'm close friends with the wholesaler, he runs one of the largest distributors in NE. But yeah, he's straight with what he says. If he's wrong he's misinformed, not lying.

Anyway, what particular visual signs can I look for to properly identify these guys?

I second the barramundi sentiment. L.Niloticus will have a much more contrasting pattern even at a small size. Small mundis will fetch $10-15
