ok so i ordered me a fx5 for my 125 gal gar tank that i would like to eventually add a catfish in. the substrate is sand, what filter media do you recommend to place in its 3 set of trays for the load i have. the gar are about 10 inches or so
 
Fill all with high quality with bio media. Catfish have a huge bioload.

If you don't mind washing the canister every 2~3 weeks or so, add a polishing pad ontop of the first basket.
 
I fill the top tray with filter floss and the rest with Seachem Matrix.
 
Get the Eheim media it is the best out there. I use it in my Fluvals.
 
Seachem Matrix has more bioavailable surface area and can allow for denitrification, something neither Eheim's biomedia nor Fluval Biomax can do.
 
since your substrate is going to be sand you're going to need to be careful doing water changes and it's a very good idea to cut the intake tube so that it only picks up upper level water.

sand and FX5 impellers are NOT best buddies..

According to Seachem,so might be considered to be biased.
I doubt you will have any probelm if you use any of the quality ceramic type media's be it matrix or substrate pro or the fluval variant.
I personally like pumice gravel,as I can get 16 lts for less than 4 ltr of matrix and it has a very similar internal stucture to matrix,There is so much porosity in pumice that there is often more empty space than actual rock and in fact some pumice can float on water to start with.
It will be going in my new sump.
