Whats the purpose of putting ghost shrimp in an aquarium with fish, i was once told that they scavenge for fish waste, is this true?

In my tank they did a pretty good job of scavenging, until I
received a new batch of Ghost Shrimps. They weren't Ghost
Shrimps after all. One of them grew to over 3 inches long
and ate a bunch of my small neons.

This is very interesting. I have already seen many claims their own ghost shrimps are eating their fish and snails. Do you have pics? 3" is too large for a ghost shrimp. Perhaps what we thought to be ghost shrimps may not be ghost shrimps after all. This has been baffling me for awhile.

Here are a few pics of my not so ghostie shrimps.

Pic #1 is what we are calling Beastie. This pic was
taken a few molts ago. He has eaten about 10 tetras,
6 minnows, a Danio and countless other smaller shrimp.

Pic #2 is one of Beastie's younger siblings. If he doesn't
watch out he will end up as lunch to his big brother.

The color and appearance don't indicate the actual glass shrimp or so to me. What is the temperature?

I find this bit interesting. Of course, warm temperature does increase metabolic rate thus they do become hungrier and more aggressive but I've never observed this with mine when I had a few in my discus community tank. Maybe I should pick some again and study them but I'll need another tank.lol

It has been observed that at warmer temperature, this Shrimp becomes very active and sometimes turns aggressive enough to attack other small animals. If the shrimp is kept in large quantity together, it can breed effortlessly.

These shrimp came from a single LFS. I have had many true glass shrimp and these
guys are not them. They are transparent, and have the same arch in their back as glass shrimp, but they also have markings on their bodies and the red nose. I have
them in 3 of my tanks right now, temps vary from 76-80 degrees. I think the coloration is due to where they are hiding when I took the pics, underneath a ledge. I'll post a pic of them out in the open if they stay still long enough for me to get one.
