Your male "pumpkinseed" or "bluegill" (first 2 photos) appears to actually be a redbreast :)

Also, your other 2 appear to be green sunfish hybrids, they're too short nosed and deep bodied to be full greens but they have the white edging on the pelvic fins.

Find some thick weeds, like really thick. And through cast nets and dip nets into it. You'll catch babies of every type of centrarchid (largemouth, warmouth, spotted bass, blue gills.) I have even scooped baby trutles and small gar. They hide in the weeds as juveniles, and are way easier to raise and train.
 
Only if you have 1 or more than 10. Redbreasts are awful. Mine killed my crappie and almost beat my pickerel to death. Go with bluegills, they aren't as aggressive. I don't know about the colors though. My redbreasts colors did improve in my aquarium.

I keep 3 redbreast together...
 
Update on the hybrids.

The edging on the dorsal, caudal, and anal fins along with the ventral fins is extremely similar to that of my pumpkinseed leading me to believe the hybrids are green sunfish x pumpkinseed.

Pumpkinseed are beautiful, have 2 in my pond and their colours are absolutely insane :) Nice tank!
 
Great score, that's a nice collection you have there.

Obviously I have never kept US natives due to my location but I would guess they will be less skittish if you added a background to the tank, a black or blue sheet of card on the outside should do it. Fish liek to feel secure and even more so with WC fish. The background will let them feel more protected and in turn they will calm down.

Looking forward to seeing some more pics :)
