I plan on moving the dempseys into different tanks once they start pairing off. the 55 will be home to a pair i hope :) (crosses fingers)

Salt, once added to the aquarium does not get used up or evaporate so if you want to keep that 1 tblespoon to 5 gallons ratio as recommended, you would only add the salt for the amount of new water you add during a water change.
 
Also, you only need the salt in times of stress (new tank, nitrites present, sick or injured, moving). Breeding EBJDs is going to be very hard since you need to breed him out to a normal female and then breed female fry back to dad. You are looking at another 2 years before any success but keep with it. Sounds like you want to!
 
I wouldnt mind a pair like that.. but a regular pair suits me fine as well. I just cant wait for them to grow. But it looks like thats gunna take a LOOOOONNNGGG time.

What is substratepro and matrix rock?

Im not sure about any media... should I get any special ones? I remember in my 10 gallon filter there were these white mini bio-toilet paper looking things in a plastic sack.
Do i need one or am I all set up?
 
Matrix and Substrate pro are biomedia for canisters and have lots and lots of surface area for their size and great for bacteria to grow on. If you are running the canister without media, you need to get some ASAP.
 
Oh, well i just use whatever came with the canister. I has in it Bio-Chem.

Can you lead me to a link to what this is?
 
Bio Chem Stars? Black Plastic stars? They have no surface area. Keep them in the canister but put something better in the media basket as well.
