I'm sure we can understand that you want both bad azz fishes,but the issue is though,they grow into monsters.Don't be selfish and get rid of one of them honestly,because you will end up with 1 fish dead or both fishes dead.

First off if the Covict is male the Dovii wont eat it as long as you never feed it live food. With that said a 75 gallon is too small for Umbee and Dovii. Keep the Convict and add similar sized cichlids such as Firemouth, Salvini, or Jack Dempsey that might work.
If your convinced you want the Dovii and Umbee you will need atleast a 240 gallon tank and even then may not work. So if it were me I would decide on either Dovii or Umbee and a 240 gallon tank. Then you could do dithers or target fish such as Tinfoil Barbs or Silver Dollars.

The convict being male or female won't stop the fish from eating it. If it fits in its mouth and he can catch it, he will eat it! And anyone who has kept Con's know that they challenge everything which means they are easy meals.
I even heard a story of a Con flaring at an Oscar and charging directly into his open mouth, it was the Oscars easiest meal.

Totally agree. A big fish like that does not discriminate between male and female fish. If it can fit in his mouth. It is gone. And about the Con charging right into the Oscars mouth.

I agree w/ this, and that is what I would do in the future.

Besides the fact that's it too many fish for the 75 gallon, a Dovii and Umbee would be awesome!
