I would be personally cutting the water maybe not as high as normal 60/40 but 80/20 maybe to help lower nitrates add the plants which will help a lot but you don't want to do straight RO without the supplements. I would look into the denitrification systems that you can get for SW systems.

I would just do R/O man, my parents have a well and they use R/O for drinking/cooking water. As far as re-constitution of R/O water you can find a bunch of diff products for that at your LFS or any online store such as BigAl's etc. Seachem's equilibrium, ROrite and many others I'm sure.

Thanks guys. My lfs carries equilibriam, guess I'll pick up some of that. I just ordered new replacement cartridges, but only the bottom 3 and not the "membrane" which I think will be good.. Will look into cutting the water too thanks!
 
You will find that adding minerals back to R/O gets costly in a quick fashion. As mentioned far better to mix the R/O with normal water to get the minerals. I gave up on ro water after a couple months, decided its cheaper to find other ways to fight nitrate. Also I think I read that water from a water softener is bad for fish; don't quote me on that but check it out.
