Green Spotted Puffer (GSP) Growth phases?

Anyone who has any personal information about GSPs around here? I've had one before a few years back, but I had to move and could not keep him. I just adopted two of them. I know they transition from Fresh/Brackish to Brackish/Marine, but I'm looking for information on the growth rate. The two I have combined might be the size of a single ping pong ball. Right now, they're in a 5 gallon quarantine tank. From what I've read so far, they generally need around 30 gallons each. I have several empty tanks of assorted sizes for the transition, and ultimately, I intend to get them in my 50 gallon bowfront tank, which I plan to set up exclusively for them as marine (Unless someone knows of some good additions given the size and planned inhabitants).

Basically, I want to get the final tank set up in advance, but I don't want to go through the expense of setting it up with nothing in it for a year or so if they aren't going to be ready for that so soon. If possible, would I be able to set something up in the 50 gal that would transition between brackish to marine without completely having to redo the whole thing?

Bottom line for me is healthy, happy fish. Am I pushing it with 2 of them in a 50 gallon? I can't really get a larger tank unless I can get rid of some of my existing tanks. I hate to do that, but it would probably be more cost-effective than having two seperate marine set ups for the same type of fish.

Thoughts? Advice? I'm a newbie to Marine, but I've got about 25 years of Freshwater experience. I'm usually the one people I know go to for answers on fish, so I'm a little out of my element here. :)
 
lol, the way one has been eating since I got them this morning, I wonder just how long it'll stay small! One has already taken down about 6 brown snails in the past 2 hours. The snails are roughly 5mm each. The other seems to be a bit more sickly, and I am concerned because it hasn't really been eating. It LOOKS interested, but only gets close to the snails.
 
hopefully he will come around. I don't feed mine much as they seem to be disinterested after a freeze dried krill has been attacked. But mine might be smaller than yours.
