What would be ideal in a 75 gallon? 1 male with 1 female or 1 male with 2/3 females.

Also New World cichlids do not typically have harem breeding styles such as many African cichlids, although I think some do have this style but not as many. Most New World cichlids select one mate and that is the only mate until they are at least separated, the other mate dies, or finally the other mate proves to be more successful or stronger, such as improving the likelihood for successful populations for the future. So other "candidates" do not stand a chance to survive in that small of an environment regarding adults. I hope this helps!

And they will "do the deed" on any adequate surface

I agree, but the preference seems to be flat stones or rocks for laying eggs based on sources I have studied and from personal experiences. So they will "make do" with any adequate surface, but the likelihood for inducing the spawning drive seems to involve flat stones or rocks. They also seem to more likely breed with sand and not gravel, perhaps they are just able to manipulate their environment to help with the breeding ritual.
