The silver dollars would make good tank mates, but will eat any live plants. I feel like the tiger barbs and giant danios may or may not work depending on your GT.

Some other good options would be a few same sex smaller american cichlids all of the same sex. Some good choices would be convicts, salvini, rainbows, keyhole, and festivum cichlids are all fairly easy to obtain. If the GT is to be the focus of the tank, its important to make sure that it is much larger than the "dither fish". Right now I have a 6" GT in a 75 with 2" GT and Jewel cichlid young, and it is working great (he was in a pair, but he and his mate got sick and i had to remove her).

Another thing that I had in this tank until recently was a 6" senegal bichir. The bichir was in the tank when I originally got the pair and stayed in the tank while they were breeding. They left him alone unless he came near their cloud of babies. And when they did bite him, his armor-like scales protected him. I've kept bichirs with GTs on two occasions successfully, you just need to make sure that nobody in the tank will fit into its mouth.
 
I have a GT with the same issue as well, I think he/she will grow out of it.... I have dithers and a convict in the tank with him and he chases them around some, but when I come to the tank to feed, he darts behind the driftwood....

mine is about 3-3.5 inches
