What are the differences and how can you tell fish from each location apart? Please elaborate...

The Equador based fish are larger and have black speckles on green backing.
The Peru based fish are smaller and have green speckles on black backing. (from what I hear these are more aggressive, but mine are only about 1.25" at largest so I have yet to find that out for myself.)

I've heard of Saums(equador based) getting to about 12" and the peru based fish getting to about 8" if not smaller.

Saums don't have black speckles. The scale is shiny green or blue, and the middle is the base color of the fish.
