Welcome. Coincidently, I just got back from a trip to Pueblo, Co and I passed through Oklahoma (panhandle, yay).

I'm not too familiar with the panhandle, but I would imagine that watching storm clouds build across the plains would be impressive. If it has nothing else, the panhandle has a wide-open sky!

The panhandle is really flat, but on the way back I did see a storm front that stretched all along the horizion as far as I could see. Unfortunately, I was driving so I couldn't get a pic. I did seeand photograph a nice sunrise on the way out, though.
