Depends on what you define as 'stock'.
I like fox bodies.... 90-03 only. I've had six of them (81,82,90,93,93,90). I'm not a fan of the non-airbag steering wheels, but I do love the old four eyes. The low end tq makes them fun. Easy to mod, everything is very basic and straight forward. Fox body's biggest stock downside is brakes and suspension. A quick pad change, slotted discs up front and stainless lines fix the brakes. Springs and dampers GREATLY improve the feel of the road. They sit an 1 1/2" too high (IMO) in stock form.
The 98 compared to the 00 are two very different animals. Both being Roush, they come with the suspension/brake upgrades. Right off the bat, the V6 out brakes the V8 (both with 13" all the way around). But this weekend, the V8 gets 14" 4 pistons to stop with.
The V6 is now set up with an aftermarket tubular suspension and is gutted (A/C, heat, stereo, insulation etc). Fun track car, not so fun street car. The V8 is a bit nose heavy, but much more well mannered as a street car.
As for power, V6 built motor with boost makes roughly 200 hp more than the boosted V8. But the power band is different. The V6 sees full tq by 2500 RPM, and had a 5600 RPM redline. The V8 starts making boost at 3000, and climbs evenly.
The 1970 Mach 1 is a whole different topic. Those things where good in the day, but like riding in a tank compared to cars of today...even with the upgrades done while restoring it.
