That's good, I'm not real big on sardines but I do like mackeral. As far as mercury poisoning, that's the last of my concerns. My wife cooks alot of pork but I very rarely eat red meat and if I do it's usually a nice sized ribeye. Another good source of protein is boiled eggs, I try to not drink too many protein shakes but I do like to drink one immediatley after a workout. I don't know what kind of phone you have but they have an app called MYFITNESSPAL, its a calorie counter and it will help you achieve any weight goal. Try to switch you workout up periodically as well.
