Indeed, it's the case for morays and polypterus alike. I think it's due to the case of poor eyesight balanced by strong sense of smell & sense of movement. They could feel and smell food is near and moving, they just couldn't quite comprehend what's holding the food.

Amazing collection. So you have a P. Senegalus, an Erpetoichtyes (ropefish/snake bichir) and an albino P. Senegalus. Cool!

I have one P. Senegalus, who had stick with me through thick and thin since 2010. Never found an Erpetoichtyes though. And I dislike the albino variation of P. Senegalus, as they are more aggressive than the original..

I actually haven't noticed any aggression with the any of the 4 albinos I've had

Next to FW/BW morays, I think polypterus are the most fascinating FW fish.

Nice to hear that your albinos are not aggressive. I used to own one, which was fine when it was little, but when it has grown big, it began to show aggression, even biting a larger spiny eel at one point, so I sold it. That was about 2011 I think.
 
yeah if my regular albino did that to either of my fire eels or my black spotted it would be out the door quickly. My long fin would just get seperated but he is already 9" so I don't expect problems
