the two catfish i have are with guppys the guppys are dying so i need help on how many catfish i should put in?

What are your water parameters? This could be a clue as to why the guppies are dying. If it is, you'll need to get it straightened out, or the cats will die, as well. I'd check out the water quality before I added anything else here. As for the cats' potential size, I'm not sure (surely someone will chime in here), but you'll need a bigger tank. Ten gallon tanks are highly susceptible to temperature fluctuation, water quality problems, and overcrowding. Upgrading tank size ends most of the issues for you.
I have a 5" upside down catfish, I think likely to big for a 10 gallon, 10 gallon sounds very small, what are the dimensions?
i have a 10 inch upside down catfish..definitely will outgrow the 10 gallon..what color is it..is it black in color. then its asian upside down catfish and grows to about 12 inches..thats the one i have..upgrade or give it back to the lfs buddy
also i think they are territorial and will fight. the lfs had like 4 of them and one of the fishes lost its eye due to fighting and thats the one i got home with me. im not sure about the aggression but. so your might want to consider keeping two together
