Help... Mangrove Jack going white

Hi guys/girls, the last few days my Jack has been chilling next to his cave with no interest in food or me.
He usually gets excited each morning when he sees me and each arvo when i get home from work and today he has started to go extremely pale from his usual deep red.
Amonia is 0.25ppm
Nitrite 0.00ppm
Nitrate 20-40ppm
Ph however is between 6.6 & 7.0 so it's low.... just dosed it up...
Should i add salt?
I'm lost as to what i should do, please help with any advice.

You can add a little salt to the tank and see how it responds at 1 tsp per gallon.

Would do a big water change prior to adding the salt. Monitor a bit after the water change and see if that improves the color.

Also what are u feeding? Tankmates?

Just did about a 30-40% water change, added Prime, a concentrated water conditioner to remove any chlorine, it also helps to detoxify ammonia, Nitrite, Nitrate.
After the waterchange i added 2 x cups of salt, tank is 800L
Tankmates are a syndontis catfish 15cm and a 15cm Convict
I have 4500L/h of filtration on the tank

True, will do, i take his cuts from small Australian snapper.
He is now sitting mid water and appears to have regained a little colour around his back half however his head is still almost ghost white. I didn't turn the lights on in the tank to have a better look as to reduce stress.
It's now 5 days since he has eaten.
