Homemade beef jerky

Last time I made it I used some generic recipe from the internet that I changed a bit but this time I might use the marinade I have for my chicken wings:

-Honey
-Soy sauce
-Mustard
-chilli

Since it's jerky I'll probably not use a lot of honey and also I'll have to put a lot of pepper in there. Thoughts?
 
Sweet ive only made it once even though I got a dehydrated specifically for jerky. I use inside round roast. I made two marinades a store bought mango jerk which smelled amazing but had little flavour and a simple one with garlic liquid smoke salt and pepper and was delicious! Had it going for 8hours

I take venison either tenderloin or back leg and strip it really thin.

Marinate for 48 hours stirring every 12 hours or so.

Soy sauce
Garlic
Onion powder
Cure
Lots of black pepper
Some red pepper

Good to go

I strip it super thin and break ot down as it dries @160F.

I dislike storing it in the freezer and so doing this ensures the lowest moisture content so I can just keep it. Doesn't sit around long anyways.

I've been using top sirloin roast but from what I hear you can use any meat. I haven't heard of people using a pre-made marinade, it's really not that hard to make your own. Mine consisted of half a beer, soy sauce, and some miscellaneous spices.

I also want to try making my own fish pellets with the dehydrator.
