how can i start with a cichlid aquarium ?

If you're concerned with the pH why not just stock according to it's readings? Honestly though, most commonly available species are highly adaptable and can do well at just about any pH (except for extream high/lows perhaps). It's best to leave you pH alone and make sure it's stable, don't try to alter it though.

Other than that, just use a bunch of rock work. I have about 50 lbs. worth of rocks in my tank.

Still need to narrow down a bit more what your planning.
For mbuna I change 50% water weekly and do nothing to buffer the water.Depends on what species and what your water supply is like.

Wow. Only 17% a week for me and my nitrates don't get over 20. Course, I have a 125g and only 4 mbuna and 1 hap.
 
Yeah, it's taking me time to get a bunch more (gets expensive). I want another 30 or so. I just put 3 common plecos in there because of the brown algae on the rocks and glass. They don't bother the plecos at all.
