how do i cure nitrate??

Big water change(50%or more), and relax, not the end of the world. Dont do anything extreme like the dumping of chemicals.

BTW, what exactly is "sky high"? 40ppm is high and could be potentially detrimental but not "overnite fatal". I know people who have nitrates over 20ppm continuously. If its a sudden spike and it is from a known accurate test kit( not expired) then change the water and watch it.
Again, don't panic.

what type of filter do you have and what size tank what is your stock list how long has the tank been set up for?

How often do you do water changes and what is your normally accepted nitrate level? Did you recently feed a large meal?
