How hard are they to care for?

If thats going to be there home for life I would say 3 or 4 rays, maybe less depending on the footprint. If your planning on having this as a covered pond then arowanas make great tank mates, if its open top they would jump out. I keep clown knifes with my rays, haven't had any issues except a couple that disappeared when they where small.

I plan on having this the home for life! So no Gars? or Bigger Bichirs then? Does it matter what sex the rays are dont want any battles in the pond. I was thinking 2 females and one male would be good for me Also I plan to get a plexi glass top for it.

I have never kept bichirs or gars so I can't answer that one. If you don't want any breeding / battles I would suggest all females. Females usually get along in my experience, males sometimes like to fight with each other.

1 male and 2 females would also work fine, but once mature the male will start tearing up the females trying to breed with them. Its also good to have either a divider or separate tank to move the male to as the females usually will need a break from him periodically to heal.

May just go with all females then. Thanks for the info look foward to getting some of your Beautiful rays!
