using a glass tank? how does the glass not shatter being 165 degrees at the top and cold enough for goldfish to live underneath? i mean u can't do that.
 
Good point on the glass/heat thing. You think there is some little asian kid in the back of the thing dropping crumbs at the right time through some cool oil?
 
Most industrial fryers operate at 300-350 degrees. Nothing would fry in oil at 165.
