Oh Well.
As for the pancakes, I view it as a vessel to deliver flavor of choice. It's not really fancy breakfast, but rather something to go or something cheap and filling.
Traditionally, one start with chopped green onions, add salt, one egg, and then flour and water to make the batter.
Then pan fry with a teaspoon or two of oil to the consistency you like. It tastes like, not surprisingly, green onions lightly fried; and it is eaten with porridge etc for breakfast. I made it with Chinese Chives because I had some extras after doing a dish yesterday.
Variations: If you like your hot cakes to be more like crepes, then add more eggs(say 4 - 6) and use a slower heat and maybe even use butter as the oil(I use veggie oil). If you like it more tough and has a crunch to it, use a little more oil, stick with just one egg and turn up the heat a little.
I've never done it before but I can see if people add crumbled bacon bits(pre cooked, raw ones wouldn't work) into the batter for a more Americanized taste that would work as well.
