how old are the ones your gona be starting with?
IMO you should start them all at a young age.

I'll probably get them pretty young. Ill keep the male separate till they're of breeding age so they don't hook up to early. I pretty much basing the size off of what ever i can get at the next show.

just make sure you take your time at the show and ask questions about how they act, eat, what they eat, look at them carefully for any signs of sickness check the tail if they have one check there eye's.
