Have a 750 Fresh Water up and running for nearly a year.

I'm wondering what's the max amount of (large to XL fish) that I can fit in there.

There are around 25-30 fish in there currently. XL Arawana, Gar, 3 flowerhorns, 3-5 Midas ranging in sizes, Two large Oscars, Marble cat, 2-3 Plecos, 4-5 other large Chiclids, Large Chinese Bass....I'm sure I'm leaving a few out.

Because of the size tank there is almost no fighting that I ever see. I rarely even see two fish jaw at each other.

Not sure if the tank is fully stocked or a few more guys can be added in.

Don't forget about your current stock reaching their max size, it's fine for now but will become over stocked later on. Also adding new fishes in might break your "peaceful" community...when something works then don't try to fix it :D

Most of the guys are probably at max size, other than the Gar and a few smaller Midas/Flowerhorns.

I really have my eye on one fish in particular, an Albino Pacu that a buddy wants to get rid of. But he's the size of a basketball and placing him in my other tank, a 400 with mostly non-aggressive smaller fish would be a no-no.

setup a temp tank for that Pacu (if you have spare tank), it will be huge pretty soon :D

The Pacu is already huge. As I stated before, he's the size of a basketball. I would need a pretty large spare tank, at least 300 and above. I like him, but not enough to spend a lot of money on a new tank for a 50 dollar fish.

Yeah it really doesn't sound like you have any space left in there for a fully grown (I'm talking 30-36") pacu. I'd say you're probably fully stocked, though it would be easier to make that judgement with pics, dimensions, filtration specs, and water parameters.

The tank is 4 feet high, a little over 3 feet wide and 8.2 inches long. Has a 180 gallon sump and some solids pumps etc on it.

Photo found below. Hard to take a full pic, tank is too massive to fit in my camera for a good shot. A lot of these guys look small in the photo but they are very large. The size of the tank makes them look tiny.
