How to even floor for a 75g

so my mom didn't want the 75 gallon I had set up for her years ago so I decided to take it im setting it up in my utility room but the foor is really uneven we are talking like almost a half inch. I have composites but they aren't that thick for this much of a difference in height... stand is wooden so would have to make sure its all even.

What would you guys do?

I have always used shims.
My house in Wisconsin was built in the late 1800s, so my floors were easily a taper of 1/2 off walls to center. So I had to use shims on all 20 of my tank stands (wood and metal).
I used the basic wood shims from Home Depot (or similar places) and stacked them 2 and 3 high where needed

When I tried using composite shims it looked like I'd have to stack them 3 high but wasn't sure if that was safe since I'd have to even it out all around the wooden stand
 
If its too much of a gap use solid wood shims or cut your own to make it level. Don't forget to adjust for water weight as well, that will throw your adjustment off.

Having the bubble off balance by that little is bad? I would have imagined that it wouldn’t matter, actually I think some of my tanks are similar to this.

Yes well this might be a little much my 75g is similar and It has been running for over a year I think if the tank has trim it will be fine if you could fit a peice of styro foam into the stand underneath the tank my 125g is done that way and is perfectly level even though the floor is not
 
I would put a level inside the tank since the top plastic trim can be off. Foam is unnecessary under the tank since it's the edges and corners that you need to worry about levelling.

Is it ok to shim every few inches ? Or does the whole stand have to be shimmed side by side?

Every couple of inches will work.
As long as the stand is solid and level side to side as well as front to back.
Remember to check it again after the water weight added.
