and with the stableness...it could be anything from giving them time to adjust to the tank, lighting, decor, tank mates, etc..try the room lights for a while and then tirn on the tank lights. i run PC on my other tanks and so bright that i dont turn on the IT tank and they are stable...
someone mentioned food and vitamins...im no expert but i've never used vitamins and i'm sure the food doesnt make them stable or not.IMO
and just to clarify that i personally think stableness in dats just all depends on the mood of the fish. if they are happy they will stable. if they are not happy then they are unstable. kinda like any other fish..hope this last one helps...IMO

Some dats are:
always stable no matter what
only stable before during and after feeding and or waterchanges
only stable when Being chased or attacked
others r stable 50/50
others stable up ONLy for a few weeks after move to new tank
There's no trend which dictates why there stable. Part of the mystery of dats, bit like there breeding habits.
The only thing that will encourage stableness is time in my experience.
