How do I get him to come out from his fortress?
He only really comes out to eat, so any ideas?
Should I just add more driftwood?

Pleco bites hurt! Crap!
I poked I'm and he pulverized my hand!
Hand feeding not an option

You can try to give more hiding spots. If he's new to the tank it could take him a while to get adjusted. They are nocturnal, so generally they will not be out and about as much with the light on. Different species tend to display different behaviors. I had a gibby that was out swimming 24/7 compared to my L-114 and L-091 are VERY nocturnal. My Gibby did seem to be more sociable the more he grew as I recall. And you CAN handfeed plecos!:D

Try less light. Either use a dimmer bulb or let some plastic plants float around. Also try adding more caves, driftwood and other decor.

you just can't help it...what i didn't to minimize the hiding what move decor so that if they hide they can't be seen...wait that doesn't make sense...lol i have drift wood up against my glass like a cave deal that they love hiding in there and you can't see them in there 24/7 and all the decor that would have them stuck in there i pretty much just blocked off.
