How to optimize my HOB filter?

I want to get rid of all the carbon I know its not great for plants and can be messy if a bag rips its happened to me I would like to over filter as I dont plan on over stocking but might have some bigger fish and they could make a mess like my two dels that are going in their thank you!
 
You have many options. Among the best, sponges cut to the correct size (mechanical/biological, depending on how you rinse them).
Although I use mostly Aquaclear fiilters, for Penguin or Emperor type filters, I like this cages (see below), filled with ceramic rings.

I use Penguin filters for all my fish tanks , and standardize the size of filter pads I cut from polyester batting I bought from JoAnne Fabric. I use the cages to hold the DIY filter pads for less than 5c each pair. My 125g run on three Penguin 350, and 75g on two 350 that are sufficient to keep the water crystal clear and quieter than my HVAC. I never use carbon nor bio rings in the cages, but there is room in front of the cage to insert a foam for additional bio if needed

The same 125g was later fully planted. I added a circulation pump on the left end to push longitudinal flow against the front and back flow generated by the Penguin HOBs. Plants need good circulation to distribute nutrients and CO2 to thrive.

The Frontosa I have is 5+ year old, 10 inch. I think its full grown, but don’t know its gender. May be someone can tell me.

I also never use carbon, unless I have a certain compound or odor I want out of the tank.
I also don't care about crystal clear, particulate free water, so as far as mechanical, I just use Porret foam, which gets the big stuff, and also acts as extra biomedia.
The most important thing to me is not actual filtration, but water movement which promotes gas exchange.
I never use carbon or extra biomedia either. Any surfaces (substrate, rock , plant and glass surfaces) are bio media and all you need to provide is oxygenated water. So good water movement to promote gas exchange is essential not just for bio, but for plants too. I do care for crystal clear water for my enjoyment so mechanical filtration is as important to me as good water movement.
