Since it's a new/quarantine tank, you could use a bunch of lake water to ease the transition for the fish. Just know that, as good of a way to ease acclimatization as it may be, it does increase the risk of introducing hitchhikers or parasites. But since you'll be deworming your fish anyway, it's a fine idea in my books.

The water from the bag? Naw, it will have his waste in it. Just pour it away.

okay.. one more thing, i jsut got this tank and i fileld it its cycled but i have no heater for it, figured it would be fine with no heater being were i live game fish are under ice half the year any way? is that okay? and i dont think ill do the lake water thing prob just keep my water thats in it, in it, being its already filled
 
A heater won't be necessary, but watch the thermometer for a few days and make sure it's not rising and falling too dramatically.

Yeah, sunfish are really hardy and your plan sounds good. The tank water should be fine if it's dechlorinated and free of toxins.
