How is it a hybrid if it is a peacock to a peacock?

Peacock bass is only a common name. This is why using common names is sometimes confusing. They are known as peacock bass to everyone but to science they are cichla. And under that genus there are many species. Hybrid: refers to offspring resulting from the interbreeding between two animals or plants of different species

breeding different subspecies is not a hybrid... that term is way overused on this site...
they are just crosses.. not hybrids...

What do you mean subspecies? They are their own species. A cichla monoculus and cichla temensis are totally different. A perfect example of subspecies would be the parachromis motaguense. They have a red race and a gold race. According to my book, a monoculus and temensis aren't the same species.

Again, not a subspecies. There are over 15 different species of cichla. I believe a cichla orinocensis from Brazil and Venezuela would be considered a subspecies, correct?
 
I'd say locale, not subspecies.
 
So in other words it is not like mating a yellow jag to a regular jag.

That would be like breeding two localities. For example, the panther chameleon. It'd be like breeding a Ambilobe to a Nosy Be. Same animal, but two completely different colored animals from completely different regions.
 
How come they all look so much a like then? It is almost like looking at a German rottweiler and an American rottweiler.

OMG you guys don't understand do you?! A genus is like a family, and species are like cousins, so you start when 2 different species(cousins) start to breed and successfully have offspring you end up with a hybrid....

But with humans we call that incest.

Not that hard people...
