This would look amazing with anything...get some nice driftwood in there as well...maybe plant a few mangroves near the top.
I have no idea why you are not doing this... GO VERTICAL!

Here's a few shots of my tank with a setup similar to what you're describing, except without the plants. I love watching the fish dart in and out of all of the caves, and it has practically eliminated all aggression.
mine goes left to right, top to bottom and all the way out to the front glass. I've eliminated any larger or ball shaped fish from my set up.
And again, no pictures! jk 
I'm personally not a fan of stacked rocks, I think the same type of arrangement, but using driftwood, would look a lot better.

My pieces are large. Some of the base pieces are the size of a decent sized honey glazed ham.
