Not all brown bullhead catfish are speckled. I think it is only the southern form of brown bullhead catfish that are speckled with black and white.
 
Weird. Do you know where you heard that? I read that there are 2 different subspecies, but I haven't found anything about one not having mottled coloration. It's what their species (nebulosus) is named for.
 
I do think all browns are mottled, but the northern ones pattern doesn't contrast very much. Baby browns are practically solid black with white bellies from what I have seen. The pattern develops as they get to be about 3 inches for the type here in VA. Some other species of bullhead have some speckling also.

I'm trying to get one of each species of bullhead here in VA and I'm finding that the distinctions between them can be very difficult to figure out. Especially with babies, which is what I'm after.

Actually not all browns are mottled, even in adults of northern subspecies which can be spot-less in some populations.
