Try really hard to get him on Massivore, starvation method isn't fun but it's the most effective method. If you really feel you have to, give him some feeders once to fatten him up and get on those pellets. He's most likely stressed from transport and shipping to a supplier then store if he's really straight from Thailand at that size. It'll take a little while for him to adjust to captivity but as long as you do all of the above he should be fine. Also I'd say you didn't overpay as long as there aren't any further issues health-wise and you enjoy and love your new (and good sized) NTT.
 
Also swimming sideways and facing downward isn't too uncommon for datnoids, it can be an issue but I wouldn't be too concerned unless it continues. Use your judgement.
 
Around here, $80 for an 8" dat is a steal, even if he's sick. It. An take quite a while for a new dat to act normal. What size tank is it in? Mates?

Its in a 180 for now. 60x30 deepx 24 high. Two Fx5, 30gal fefugium full of bamboo and photos, and is on a 24/7 water change running through a RO/DI unit.

I know im pushing the stack limits. I can sealy upgrade in a year if i have to or i can sell off a few. Well see how they all get along.

Nice filtration set up, very similar to what I'm planning right now. If you don't mind me asking what are your nitrates looking like with that bamboo and pathos? I'm gonna be setting up a 33g fuge myself and I'm curious to hear how well it works.
 
As for making them stable its just luck if that happens and no one can give you firm advice on that

You just have to give it time then one day they may go stable you you have no guarantee they will ever go stable all of the time
