Picked this guy up last week, not sure what kind of Tex he is...

Apologies for the pictures, taken with my BlkBerry.

His head is white and his body is dark black half the time...

Any ideas?

Repost in the sa/ca cichlid forum. I'm not to good with texas cichlids, but i would say esconsido judging from the black and white.
 
thats a Carptintis 100%. as for the "escondido" label, thats just a variant of the Carpintis species. need clearer pics to see if it indeed is "escondido"
 
Cyanoguttatus = small silvery spots
Carpintis = blue/green blotches

yes it does. these markings would indicate he is the "escondido" variant. like this one here:
