Stand should be strong, I've had similar home made versions which could hold way more than a 55.

Personally I would recommend you nix the Jack Dempsey and add 2 more firemouths, shooting for a single male and 3 females. You may actually need to buy a larger number and then thin them out to accomplish this. The firemouths will be much happier in a group and you will get to watch them interact with each other. If you only get two, you need to hope that they are a male and female, and become a compatible pair. Two males won't work, two females might but might not. Plus, the Jack Dempsey would get a bit large and max out a 55 by itself when full grown, if it is a male.
Then you could add some swordtails or other CA livebearers and have a nice central american themed biotope.

Here is a 55 gallon I did a couple years back, I had 5 Thoricthys Pasionis with some Swordtails, and some other cichlids which moved out as they grew. The thoricthys were a lot of fun to watch.
