I'm Fed Up...Im out of answers

Ok I came into the fish world without any knowledge. I learned along the way..its been almost a year now.. for some reason i have had on and off problems with my 2 tanks. they will be fine for months then all of a sudden AMMONIA. right now both my 90 gallon and my 55 gallon are hovering around 2-4.0ppm. I have no clue why. i have cut feedings to 1 time a day. and now im gonna take a couple days off of feeding. the 90 gallon has 2 pictus cats...2" and 4". 2 giant danios, 3 2-3" firemouths, 1 2" JD, 1 2" convict. 1 5" pleco, 1 1 1/2" GT, and a 1" green severum. all the fish are pretty small. i have 2 110ac, and 1 350 magnum. i added extra media to the ac110s...another thread someone suggested removing the carbon. (which I did).
My 55 gallon tank is a lil more crowded because i took some fish outta the 90 gallon and used the 55 as a "temp" home cuz the ammonia was lower at the time... has 1 3" choc cichlid. 3 1" german rams, 1 2" bolivian ram, 6" ornate poly, 4 3" earth eaters, 4 2" gold gouramis. this tank has 4 AC30's on it.

what is there i could do...i cant rehome and wont rehome fish right now. so lets get to another step. i dont wanna hear compatability issues either..i know how mfk is lol. filter wise or product wise i wanna know what i can do. i tried adding extra media. ive added "stability" which i think might have worked a lil bit. what can other people suggest i do. would adding biospira work?

better yet why is the ammonia high? i have enough filtration i think...the tank was cyclced...even if for some reason the cycle started over wouldnt it sort itself out? and why hasnt it yet..its been like a month or more having this problem...thanks guys for all your help.

and elaborate on the " do WC" cuz ive been doin 25-40 percent since ive had these issues..and they have not helped one bit.
 
basically i do everything right (apparently not though) the 1 thing that i could possible think of was i had been using a brand new hose to fill up my tanks with....but i would put the decholrinator in the tank and then add the water from the house from the sink...let it mix for a lil while before turning on the filters...
 
i did that about a weak ago..they are sort of chalky white rocks.. added a container of those to the ac110s...it has gone done a little...but the problem here is lack of bacteria correct>? so how do i add and maintain more bacteria?

How long are you leaving the filters off for? I turn mine back on as soon as I'm done.

Does it happen after filter maint.?
 
filters are off for maybe 30 mins. SH*T the one thing i can think of is when i shut my filters off the water drains outta the filter..but its not off more than an hour total...and people told me to shut the filters off during the adding the dechlor because the chloirne ( which isnt even traceable in our towns water) could kil the bacteria...so shutting it off gives the water time to dechlorinate
 
Im thinking you dont have enough beneficial bacteria to maintain the heavy bio loid in your tanks. You might even be losing some when you shut the filters off.
 
what can i do to add more bacteria? i mean the fish are not huge....so size wise there is anough room for the fish...
