You just screwed yourself, now you won't get one single answer based on the fish they personally like the most. My answer stands though I don't think 125 is too small for that many fish no matter what you get rid of provided the filtration is good which from looking at pictures of your oscars it is.

Right now they are pretty small so it isn't YET over stocked. But by the end of the year, it will be. Especially since I have a terrible habit of adding fish all the time. Sizes are currently as follows:
Albino Oscar: 5"
Tiger Oscar: 5"
Leaf: 6.5"
Flagtail: 6.5"
Endlii: 6"
RT: 3.5"
Sevrum: 7"
Leperinus: 7-8"
And I forgot to mention the 6" Spotted Raphael
you'll be fine w/ even that all at full size IMO. if the filtrations really really good. Which I'm guessing by the looks of your fish it is.

Yep at 125 this is fine; when they grow up, just keep up with the nitrate levels and adjust wc schedule accordingly.
The red texas would be my first choice to go, and depending on what it looks like, the albino O would probably take second (I don't like the lutinos that have lots of noticeable black/grey areas).
If they are not beating on each other and tearing at each other fins and for the most part living in harmony I would not get rid of any. They will let you know when more space is needed.
It has NO black or grey on its body at all, it has the black outline on it's fins. Are you talking about grey spots on their body? Here is a pic of him about a month ago when it was in my 90:
