most fish stores i've been to tend to group filter their tanks from a few main filtration systems around the store. with running that many tanks, it would be hell to individually filter and having to constantly be swapping out countless filtration equipment from each tank depending on how you run it, whereas with group filtration, you get a mass running off of 1 easier to clean/replace filter source.
parasites can be a problem i would think, but running UV would def help, as well as quarantining which i agree with. often cases stores don't QT due to the high in-out demand for their stock.
remember also, some fish are less susceptible or even immune to diseases that would cripple other types.
