they could show it to be fresh by netting it out the water, and then kill it and serve- it would still be damn fresh. if anything that is done for amusement or as a pointless experiment
 
I don't think that's a Dat. Freshwater fish can't be eaten raw because of the bacteria that the fish has unless it's cooked out. I'm amazed that the fish was alive after that. I wonder how long it lived after that? I'm also amazed that the chef was able to get that clean cut fillets without the fish flopping around.

aren't salmon freshwater as well as salt? They move into freshwater when they spawn or breed right? Surely they would also be able to catch freshwater fish disease.
