is this true about peacock bass?

It might be true about Pbass, but if this was true, then wouldn't a wild one X a captive bred one have a certian % of offspring with red eyes? I know many cichlids have variation in eye colour. I don't have pbass but I have several parrots that are siblings, some have white eyes, some yellow and orangey, some even have changed with age. Its also possible that if pbass change their eyes to red when they are stressed that those wild ones just didn't adapt to tank life very well
 
Genetics is complicated Kaliedoscope, and I only know a little about it, but there are always variations. I think that is the idea behind cloning, to get 2 genetically identical creatures.

No... Some species of cichla have red eyes, and some don't, it doesn't matter if they are CB or WC.
