they can be sexed relatively small, one of the easier CA cichlids to sex if you go based on the jaw spangling. IME they grow faster, but not to the total size that the GT's

Like said previously, 6 inches or so fast then slow after that.
Feed them hikari gold and cubes as a treat.
You can sex them around 3 or 4 inches usually. Maybe a little smaller.

Keep in mind many many things influence growth rates from diet, to water quality, to stress, to genetics...
In my experience yes Dempseys grow a bit faster than GTs (Saums) but the "typical" adult size of a Dempsey is slightly smaller than the "typical" adult size of a GT (Saum).
Sexing prior to sexual maturity is not reliable, as markings can and often do change... sexual maturity and therefore reliable sexing generally occurs between 3~4"...
