dempseys are skittish a lot of the time, usually if they are comfortable with the other fish in the tank, they won't be as skittish

I changed the tank from sand to natural gravel and that seemed to help darken he/her up ( it has a long pointed dorsal fin). I brought him back to the store where I got him and they examined the fish ( eyes, gills and fins ) with me and told me he seems to be healthy. But they couldn't explain the bad colouration.

There is a pure blue background. Only the back panel is covered. The tank is placed by a staircase and is in between the stair case and another room.

soon I'll be setting up a 125 gallon for him that will be in the other room with a lesser amount of traffic
 
that could be it, maybe it has to many people walking by and its stressed. i'd just use a black backround it should help color him up
